Pink Lamingtons

Photobucket What better way to start a gorgeous Friday morning than with pink lamingtons! They are one of my favorite treats and it just seemed right to make them yummy and pretty! I bake out of my head (dont ask, it must be a special talent... So this is the recipe I came up with.) 



Ingredients for cake: 
1 3/4 cup of flour 
2 teaspoons baking powder 
2 eggs 
1 teaspoon vanilla essence 
1 cup of white sugar 
3/4 cup of butter 1/2 cup of milk 
Pink food coloring 


Ingredients for sauce: 
Canderel yellow 
2 tablespoons cocoa powder 
1/2 cup of milk 
2 tablespoons of butter 
Coconut 


Method: 
Switch oven on 180 degrees c and butter a square baking pan. 
Put sugar and butter in a bowl and mix till smooth, add eggs one at a time and mix with an electric mixer till light yellow. Add vanilla essence. 
Sift in flour and baking powder and then milk and food coloring until it has a loose smooth consistency. 
Pour into baking dish and put in the oven for about 20-30min until a skewer stick comes out clean. 
Take out of the oven and let cool on baking rack. 
While it is cooling down make the sauce. Add butter, milk and canderel yellow (add the sweetener to taste) and microwave until the butter has melted. Add cocoa powder and mix well. Cut the cooled cake into squares. Dip it in the chocolate mixture first and then into the coconut. Let it settle and dry, best served the next day!
